Lomo Saltado

Ingredients

  • 1 kg loin, steak or rump
  • 2-3 coarsely chopped tomatoes (long strips)
  • 3/4 kg coarsely chopped onion (long strips)
  • 1 kg white or yellow potatoes
  • 3 teaspoons chopped parsley
  • 4 tablespoons vinegar
  • 3 tablespoons sillao sauce
  • 1 teaspoon garlic
  • 1 cinnamon stick
  • Salt, pepper and cumin to taste.

Method

Peel and chop the potato to fry in plenty of oil. As you heat up a wok or frying pan, add the meat, which should be ready within 3 to 4 minutes. Cut the meat into sizable strips and season them with salt, pepper, cumin and vinegar.

Add the meat to the hot wok or pan and, when it is ready, add the onion and tomato to fry them and give them flavor along with the meat. Then serve with the French fries and white rice as desired.
