In a frying pan, make a flavor base by combining the diced onion (Brunoise cut) and minced garlic. Fry for 20 seconds. Add the cooked beans (they should have been cooked the previous day) and move slightly from side to side. Continue frying until the flavoring acquires the same color as the flavor base. Add the cooked rice and begin crushing until the beans and rice are the same consistency. Combine everything into a dough-like mixture.
Remove the mixture from the frying pan or use a different one to make another flavor base with the oil and yellow ají pepper. Then add the mixture made previously. Begin molding. Serve with fried egg (known in Peru as estilo pobre, or pauper-style).
